Chicken Potpie with Puff Pastry


Cat Cora did it again! I found this lovely recipe in "Cooking From the Hip" Can you say "ultimate comfort food"??? This dish was amazing! The puff pastry was easy to use and the light and flaky texture was perfect with the filling. I think Chip and I were both licking the ramekins when we were done :)

  1. Ooh, those look so good!!! Chicken pot pie has always been one of my favorites! That's one thing I miss, I wish I could figure out how to make a veggie version :)

  2. You could always make this recipe but use vegetable stock instead of chicken stock and just add more veggies. This recipe already has onion, carrot, celery and zucchini so you could add corn, potatoes or green beans (or all three)! If you'd like I could work on converting it for you and email you the veg-friendly recipe :) I didn't know you were vegetarian!

  3. Thanks Geri, I would love that! :) That sounds really good with all the veggies, especially potatoes (my ultimate favorite :) Even though I am vegetarian I still love looking at all your dishes, they make me want to get cooking!
